Banana Waffles

These super simple waffles are lightened up from the classic favorite while adding a great source of fiber.


Ingredients:

- non-stick spray

- 3 Bananas

- 1 tbs of vanilla extract

- 1 egg

- 1/4 cup of flour

- 1 tsp of baking powder.


Directions:

- First thing is first, you will need to heat up your waffle iron on high heat

- Mash the bananas in a bowl

- Add the egg to the mashed bananas and mix until it is well incorporated.

- Next, add the vanilla until it is well incorporated.

- In a separate bowl mix the flour and the baking powder together.

- Combine the flour mixture and the banana mixture until it is well mixed

- Now, it is time to cook this batter. Spray an even coat of non-stick spray on your heated waffle iron.

- Pour enough batter on the waffle iron until it is coated. The amount of batter you will need will depend on the size of your waffle iron.

- Let the waffle cook until it is golden brown. It will feel a bit flimsy when you pull it off the waffle iron. Let it sit for a couple of minutes before serving so it can firm up.

- Finally, top the waffle with your favorite topping. I like to add some sugar free syrup.
