This marinade chicken is definitely one for the taste buds. This sensational chicken is paired with savory butternut squash with a light and airy pasta salad for a complete meal.
Ingredients:
- Thin sliced chicken breast
- Butternut squash
-Fresh rosemary
- Salt
- Pasta (your choice)
- Cherry tomatoes
- Red bell pepper
- Light string cheese
Directions:
-I like to start with marinating the chicken. You can use any type of container you like to marinate. I like to use a large gallon zip lock bag. This way I have no dishes to clean. Place the chicken in the bag and pour about 1 cup of the Olive Garden light Italian dressing over the chicken. Make sure each piece is evenly coated.
- Place the chicken in the refrigerator for a minimum of 2 hours.
- Heat the oven to 400 degrees. In a bowl you are going to combine cubed butternut squash, about 1/4 cup of olive oil, 1tbs of chopped rosemary and salt to taste.
- Spread out the butternut squash on a non-stick pan or place parchment paper on the pan. Place the pan in the oven for about 30 min or until the butternut squash starts to brown.
- Next boil a pot of water and add a box of your favorite pasta and boil until the pasta is done. Remover and drain your pasta
- Place the pasta is a bowl that will be large enough to mix in your other ingredients. Pour about a cup of the Olive Garden light Italian dressing over the pasta.
- Next add 1 cup of cherry tomatoes cut in half, 1/4 cup of red bell pepper and about three light cheese sticks cut up. Mix all the ingredients into the pasta until evenly distributed.
- Finally, lets heat that grill up. I use medium heat. Place each piece of chicken in a single layer on the grill and cook until done.
